Clemintine's stuffed pepper salad

This dinner salad was fun to make.
Scrambled eggs with onion tomato garlic and carrot diced were stuffed into the two halves of a green bell pepper topped with Pepper-jack cheese shreds and garnished with sliced cherry tomato Boston red lettuce Clementine slices parsley, green onion spear and carrot with 3 cheese shreds blend.
This one turned out to be a very satisfying and delightful dinner salad.
Served with pomegranate green tea.
